We source the majority of the fruit for our Chardonnay program from heirloom clones to highlight nuances and create a more complex wine. We press our chardonnay lots long and hard for extra phenolic character, then ferment and age the wine as sinlge lots in a combination of 140L Chablis casks, half barrels and netural French barriques for about 10 months before blending.
